Konstantinos Roussos, because of his love for viticulture, continued to grow his father's and grandfather's vineyards and gradually expanded them by planting new vineyards of local varieties in a linear manner. The first large planting took place in 2007 with 40 acres and in the next four years 30 more were planted. The winery started its operation in 2017 producing bulk wine.
The first bottling in glass bottles took place in 2018: white from Monemvasia-Malagousia-Asyrtiko, rosé from Mandilaria-Mavro Aidani and red from Monemvasia-Mandilaria varieties. In 2019 two more bottles of the PDO varieties of PAROS, Monemvasia and Mandilaria, are expected to be released..
