Konstantinos Roussos, due to his love for viticulture, continued to cultivate the vineyards of his grandfather and his father and gradually expanded them by planting new vines of local varieties in a linear order. The first big planting of about 40 acres took place in 2007 and in the next four years were planted 30 more. The winery started its operation in 2017 producing bulk wine
The first bottle was bottled in 2018: white of Monemvasia-Malagousia-Asyrtiko varieties, rosé of Mandilaria-black aidani and Monemvassia-Mandilaria varieties. In 2019, another two bottles are expected to be released from PDO varieties of Paros, Monemvasia and Mandilaria..
